Α few years after in 1970, he returned to his home country and the idea of becoming a baker was born.
He looked for locally harvested and ground flour especially barley and with the help of his wife Susana they experiment on traditional recipes found in the mountainous area of Asterousia. very soon the barley rusk was created and became a staple in people's diet.

Since 2009 Dimitris Koutentakis (Kapsalis) and Vardaki Kiriaki's family has taken over the production of these rusks. the recipes, the ethics and the style of production of such a popular product in Crete have been all passed on to the next generation so that this important tradition will not be lost.
